Guys! Let me tell you about this place!

It is located on 2717 Martin Luther King Junior Blvd Dallas, TX in South Dallas. The location isn’t the greatest, but the food is AMAZING. My sister and I went on a Saturday because we are trying to try different cuisines and let me tell you…Elaine’s is the truth! We never had Caribbean food before and I’m glad our first taste was here-right in our own city.

We had the oxtails with curry chicken, brown rice, cabbage, and hot water cornbread. We thought sharing would be the perfect amount for lunch, but boy were we surprised. You get soooo much food even when we shared a large plate. Never had oxtails before, but they were succulent and tender. Everything was very flavorful and the environment inside of the building was cool and laid back.

I wanted to try everything on the menu, especially their patties! I saw great reviews for their patties on Yelp, so we will definitely be coming back…after we burn these 1,000 calories we just ate lol.

A must try if you live in the Dallas area.

Food Prep Sundays: Meatless Meals | ft. Quinoa Chili

Hello lovies!

Yesterday was food prep day so I wanted to give you guys ideas on healthy meals. My sis and I are going vegetarian this week…no meat for us! Food prep went really fast and easy. Super delicious meals without meat! Read through the end, there’s 2 easy recipes at the end! Enjoy!

Breakfast:

Fruit and Peanut Butter or Almond Butter

Lunch:

Veggie Whole Wheat Wraps with Lentil Snaps and a small piece of dark chocolate bar.

Wrap consists of cucumbers, carrots, tomatoes, arugula, feta cheese

Dinner:

Quinoa Chili with avocado and whole wheat crackers

Ingredients

1 c of quinoa

olive oil

2 cloves of garlic

1 onion, diced

1 can tomato sauce

1 can of stewed/diced tomatoes

1 1/2 T chili powder

2 t ground cumin

1 1/2 t paprika

1 can kidney beans

1 can black beans

frozen corn

avocado (optional)

Instructions

Cook 1 cup of quinoa according to directions on the package.

Heat olive oil in a large pot over medium heat. Add garlic and onions until translucent.

Stir in quinoa, diced tomatoes, tomato sauce, all the spices, and 1-2 cups of water making sure most of the ingredients are covered.

Reduce heat to low; simmer about 30 minutes.

Stir in beans, corn until heated through.

Serve with avocado, low fat sour cream and crackers.

Snacks:

Almonds, whole wheat crackers with hummus, oatmeal, boiled egg

Bonus Snack:

Banana Oat Cookies; only 3 ingredients! Mash a banana, add oats, dark chocolate chips and cinnamon. Bake for 15 min in 350 degree oven. Yields about 7 cookies.

Do I See Myself As Others See Me?

Something I wanted to get off my chest…

Often times I sit in the mirror sucking in my stomach, critiquing my body, examining my face. I can get so caught up in the superficial things of life and wander why some days I feel low.

I think we all can get that way sometimes, but the time to stop that way of thinking is NOW.

Do I see myself as others see me?…who cares what others think??? Keep striving to be the best person you can be. Do you!

No more will I compare myself with others.

I am perfect being not perfect. No one is perfect. Everyone wishes they had something bigger, better and the matter of it all is that we are all perfect just being who we are now. Love yourself in the now! Of course we can work on good eating habits, work on building skills, or improve on being a better person, but don’t fault yourself in how you are right at this moment.

Change the way you think about yourself with the change of the new year while the hype of change is still in the air.

I will eat that cupcake without regret.

I will be fine with treating myself every now and then.

I will love who I’m looking at in the mirror.

2015 will be the year I except me and my flaws. The year of loving myself and knowing I offer more to the world than I think I do.

I am perfect how am now.

What I Eat In A Day

I just wanted to give a little inspiration on what to eat throughout the day while trying to stay healthy.

Breakfast

Lunch

I made these veggie spring rolls for lunch. They are super easy to make and you can fill them with anything. I filled mine with avocado, carrots, cucumber, and spinach with a dash of sriracha sauce of course! So refreshing and a healthier option for tortilla wraps.

Dinner

Quinoa Stir fry is what is on the menu for dinner. Check here for a similar recipie. So delicious!

Snacks

To speed up your metabolism, you need to eat 5-6 small meals a day. Healthy snacking is very important in doing this. Here are a few options that I ate during this week. I usually eat a snack in between breakfast and lunch, after lunch and before dinner, and one last snack after dinner.

Lettuce with turkey sticks. I got these turkey sticks from Aldi

These turkey sticks are similar to these. View link for nutrition facts. The ones I got didn’t have as much sodium as the ones in the link, which makes for a perfect snack.

These are a great alternative to chips. They taste just like Funyuns! View this link for nutritional facts. Lentil Snaps

Raw Vegetables with Ranch Dip or Hummus

I usually crave something a little sweet for my last snack of the day. I opt for baked fruit like apples, pears, or bananas instead of cake or brownies. I sprinkle the fruit with cinnamon and let it bake in the oven for a few minutes. I add the fruit to a little bit of plain Greek yogurt and sprinkle it with granola and just a little bit of honey for added sweetness.

Going Natural or Naw???

Happy Sunday Funday peeps!

While I’m enjoying this “too close for comfort” Cowboys game, I thought blogging would help calm my nerves lol.

Am I going natural or naw???…If you follow me on Facebook or Instagram, you would know that….yes your girl is going natural…well I’m already natural. I did the big chop!

As you know from previous post I was transitioning to texlaxed for some time, then fully texlaxed for a little while. The next step for me is to go natural. Since texlaxing my hair I always knew that eventually I would be going natural. That was my ultimate goal….who knew it would be so soon though??? I am super excited to be starting this journey and I have tons of help from the natural community. YouTube, my sister, friends, and other forums like Hairlista will be my source of help. Let the fun begin!

Cutting my hair felt so therapeutic. Even though I have to literally start all over with my hair journey, it was like a “new year, new me” kind of thing. I am not my hair. I know this journey will test my confidence, patience, and will power and I am ready for the challenge.

*I was fully texlaxed(cut all bone straight relaxed ends) for 3 1/2 months

*I big chopped on January 5th, 2015.

I will rock my twa (teeny weeny afro) with confidence even though I’m still nervous about it. I will also still be wearing my wigs for protective styling. I’m excited about this journey and ready to see how my hair will thrive:)
