Firsts, Vegan Food, and Scary Ashley! H-Town Edition

Wow! It feels so weird writing a post after such a long hiatus, but your girl is back! I have been wanting to get back into blogging, but just didn’t make the time for it. I recently got inspired from a travelling blog that I ran across  last week. I started my blog to document different points of my life, so why not have some posts about my random, spontaneous trips!

My sis and I are known for taking random weekend trips. This weekend would be no different. We hopped in “Old Faithful” (what I like to call my car) and traveled down Highway 45.

After 3 and a half hours, we were greeted by our best friend. We always have a blast with her and this trip definitely did not disappoint. Little did we know we would be doing a lot of firsts.

Breakfast at The Egg and I Cafe started our day. This was not a vegan restaurant, but me and my sis always make a way out of no way:) I had avocado toast with a side of fruit. My sis had  oatmeal, which she made sure was not made with milk, an english muffin and fruit. What a great meal to start our packed day!

We knew it would be raining soon, so we rushed to this place where they had kayaking and paddle boating. Let me tell you-this was quite the adventure. I’m not going to lie, I was scared at first, but after getting the hang on how to kayak, I considered myself a pro, ha! Long story short, a mini storm pasted through as we were kayaking, my hat flew off, and we got a mini arm workout trying to paddle against the huge waves and winds that overcame us as we tried to make our way back to shore. I was yelling “I’m scared,” as we were getting pushed by the wind. It was quite funny once I was actually on land.

To past some time we went to the mall and mainly did some people watching. We got a little hungry, but of course we couldn’t find anything vegan so we went to Chick-fil-a to get some waffle fries w/ ketchup and bbq sauce…yum! …#WhatVegansEatAtTheMall…#MakeAWayOutOfNoWay…#AccidentalVeganFoods.

Next our friend took us to her church called Hope City. What a great experience! We came right in time for their new series called Love, Sex, and Marriage. When I tell you this series came right on time…it came RIGHT on time! The pastor was super relatable and made the worship experience fun. I truly had a good time.
The day was almost coming to an end, but we still had a few things to do. We had din din at True Foods Kitchen. This was already on my list of places to go in Dallas so I was very excited to go here in Houston. The menu was heaven sent for vegans and vegetarians and also people who are gluten free. Everything was clearly labeled. The food did not disappoint! Very flavorful. I had the Ancient Grain Bowl (quinoa, sweet potatoes, mushrooms, snap peas, and a yummy pesto sauce) My sis had the vegan pizza with a vegan ricotta cheese on top. Can you say LOVE at first sight!

Lastly, we headed across town to Armadillo Escape Room Adventure to meet with our other close friend. This was our first escape room, but our best friend’s 12th! Again, I was scared because the place was located in a spooky area and also when the door closed to the escape room I didn’t know at all what to expect. We scrummaged the room for clues, worked together so well, and ESCAPED with 9 minutes left! This was definitely one for the books. I see why my friend gets a thrill on completing these escape rooms.

Summary of the trip: Lots of firsts, lots of yummy vegan foods, and lots of scary Ashley! We had a blast in H-town for sure!

Let me know what you do in Houston! I will be going back and would love to know what else there is to do!

7 Day Raw Vegan Food Challenge

Well hello there! This is a wayyyy overdue post. Yall know my sister and I like doing new food challenges. I like to think it keeps us on our toes. Also we get to try new recipes and food that we probably wouldn’t have if we just stuck with our same routine. Soooo here we have the 7 day raw vegan food challenge. Raw??…Gahhhh! AND Vegan…well that part is easy because we have been doing it for so long, but to some this will sound impossible. Let’s see if we made it through. This should be fun!

Incorporating more raw food in your diet is very beneficial. You get the WHOLE nutrition of the food instead of cooking away some of the nutrients. From this challenge, we have learned that it is actually easier and quicker to make raw dinners and although we don’t see ourselves becoming totally raw vegans, we will incorporate more raw foods. Hope you guys got some healthy food ideas!

Until next time,

What I Eat In A Day | Intermittent Fasting

Hello lovlies! I’m so happy to share this video with you guys. A lot of people ask my sister and I what we eat as vegans all the time so here is a little snippet of our day. We hope to bring more of these videos to you more often because not only is it giving you ideas, but we can also go back to these videos and recreate some of these creations.

Most of you are not vegan, but please still feel free to watch this as you might want to have #meatlessmondays, want ideas for a healthier meal, or simply interested on what we eat. Enjoy!!

1st Meal: Blueberry Tofu Smoothie Bowl

Ingredients:

  • Block of silken tofu [great for protein]
  • Blueberries [natural antioxidants]
  • Frozen Bananas [“carb up”]
  • A little bit of water to aid in blending

Blend all ingredients until smooth and top to your heart’s desires!

2nd Meal: ‘Not Your Mamas’ Cornbread and Beans (haha!)

Ingredients:

  • 3 T coconut oil
  • 1 1/2 c corn meal
  • 1 c gluten free flour
  • 3 1/2 t baking powder
  • applesauce cup
  • 2 1/2 T coconut sugar
  • salt
  • 1 c non dairy milk

Preheat oven to 350 degrees and lightly grease a pan. In a large bowl, whisk together all dry ingredients, then pour in wet ingredients. Stir until combined, then pour mixture in pan. Bake at 350 for 25-30 min, until a toothpick inserted in the center of the cornbread comes out clean.

Heat up some beans and spinach on the side and top with sriracha because sriracha is bae 🙂

Vlog: Kalachandji’s & Spiral Diner

We want to put yall on some good Vegan food in Dallas! So follow along as we show you a new and “oldie but goodie” restaurant we frequent. Veganism does not have to be so hard.
*Note: please do not eat this type of food on a daily basis. 90% of our diet consists of vegetables, grains, and fruit. We cook our meals during the week and have fun eating out on the weekends. It’s called BALANCE!

Is a Plant Based Diet Too Difficult? — Radiant Life Project

A plant based diet? I know what you are thinking; you are going to be living off of carrot sticks, celery, and lettuce. You will never feel satisfied after a meal. You need meat and dairy for essential nutrients, such as protein and calcium in order to maintain optimal health. But this could not be […]
